Cream of Cauliflower Soup 1 head cauliflower, chopped 4 cups chicken broth 2 cups whipping cream 2 tbsp. butter or margarine 1 tsp. celery seed, powdered salt to taste pepper to taste Cook cauliflower until very soft, drain. Puree cauliflower in blender until creamy, but not watery. In a soup pot, heat cauliflower over medium heat for 5 minutes. Add cream, butter, and seasonings; simmer for 3 - 5 minutes. Remove from heat and blend at medium speed until smooth and creamy. Serve immediately. Makes 6 servings. ![]() |
