Jo’s Gingerbread Muffins 2 cups store bought, boxed baking mix 1/2 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground cloves 1/4 cup sugar 1 egg 1/4 cup vegetable oil 1/2 cup milk 1/2 cup molasses Heat oven to 375 degrees. In a large mixing bowl, combine the dry ingredients. Then stir in egg, oil, milk and molasses until all dry ingredients are absorbed. Fill paper-baking cup lined-muffin tins half full. Sprinkle tops with a little extra sugar and cinnamon. Bake at 375 degrees for about 20 minutes, or until muffins test done. This recipe makes 1 dozen muffins. Serve warm or cold, as muffins, or as a dessert with a topping of whipped cream. |
