Pretzels (mmmmm can't wait to try this one myself) 2 envelopes active yeast 2 1/4 c. warm water 1/3 c. sugar 2 1/4 tsp. salt 5 Tbsp. soft shortening (butter is best for flavor) 1 egg 7 to 7 1/2 c. all-purpose flour 1 egg yolk 1 Tbsp. water Kosher salt, poppy seed or sesame seed Soften the yeast in warm water. Meanwhile, mix sugar, salt, shortening, egg and 3 cups flour. When yeast is softened, add remaining flour, 1 cup at a time, mixing well. Chill dough 4 to 6 hours. Turn cold dough out on lightly floured surface. Divide in half and cut 15 equal pieces from each half. Roll each piece to 18-inches long and twist into pretzel shapes. Place on lightly greased baking sheet. Beat egg yolk and water and baste pretzels generously. Sprinkle on Kosher salt or seed and let rise for 30 minutes. Bake at 400 degrees until golden brown, about 15 minutes. Makes 30 pretzels. Edited by: Cathean at: 1/4/04 3:51 pm |
